I'd think this feature would be most useful to those using Audacity to split apart recordings from cassette or vinyl, where you've got one huge WAV that you want to easily chunk into discrete tracks. You'd have one stereo track, and then splitting that into multiple tracks would be fine, because then you could just export each track to WAV and be done.
