If so, the answer to the part about fonts is "no" - DVDs don't store the subtitle data as text, but as run-length-encoded bitmaps. The answer to the latter part, about the colors, is "not really" - the colormap is encoded in the SPU stream (subpicture data). You _can_ hack the source and change the colors manually, but since each DVD uses the colors a bit differently, you'd have to tweak the source for each DVD you want to watch. DivX ;-) AVIs may be a different story - I've been given to understand that the subtitles in these video streams are in a text format, so this _may_ be changeable, but I'm not sure how.
