It is not yet possible to freely configure the input log format. It's the next thing I want to add to the development version 2.4.0 but it isn't there yet.
For now, sarg can read the standard squid log format and the extended log format.

Best option might be to create another log file in the squid.conf like:
access_log /var/log/squid/sarg.log extended
