Did you try to set the button to 0? That should be equivalent to disable.

xsetwacom allows you to map to another button, set up a custom action or
reset to the default mapping - but there doesn't appear to be an option
to turn off/disable buttons ?

Or, is it possible to map buttons to a button that doesn't do anything ?
