Sorry to continue the offtopicness, but XML Spy has a mode like what you 
want, you might want to check it out.

I'd say that kind of specialized interface is probably outside the jEdit 
mission, but I wouldn't stand in anyone's way if they wanted to write a 
plugin ;)
