Because I find in my server /var/www/html/itop but the account is www-data and it is "curently not available" and I don't want change the file with the account root.

This can be done yes as in the tutorial you mentioned, but you should never modify directly iTop's files! Otherwise you will loose that change during the next upgrade and Combodo support team will no longer be able to support you.
You should either do it through a custom extension or through the ITSM Designer. As you are a Combodo's customer you should get in touch with the support team as Pierre mentioned, so they can guide you or do it for you.

You're mentionning the ITSM Designer, are you a Combodo customer ? If so you should contact support service ?

Yes in theory, both *Flags methods can be used to set a field to hidden.
There's another tutorial on hidding a field : Remove a field from Ticket [iTop Documentation]
But it doesn't mention the methods overrides...
