Stephen, This question needs to be directed to the Fink project. No one on the GRAMPS development team has a Mac, so we not capable of handling installation issues under OS X. OS X is not a platform that we capable of supporting at this time. Once GRAMPS is installed, we can usually handle any issues that occur, but all installation issues need to go to the Fink project.
