If we do this, do we want to also make sure that all other methods of
getting data into the database also have white space trimmed off of
them? That would include other Data Entry widgets and imports.

Also, maybe Notes should not have this done? Notes may have a newline
or two so the next notes appear as a new paragraph, and this would
remove those.
