as you can see in the demo gallery http://gnuplot.sourceforge.net/demo/image.html in 3d only 'image' works, not 'rgbimage'. also see the end of the section '43.59.8.18 Rgbimage' in the gnuplot manual. that means, greyscale images are possible, but not color images, unless you are able to have all the colors you need within one palette (see 'set palette rgbformulae') and convert your image from rgb into an image where each pixels only contains one value which addresses the corresponding color in the palette (sounds complicated...).
