With some modifications of the standard options you can produce sophisticated results, as shown on the projects homepage (http://www.gnuplot.info , section 'Demos and Screenshots'). IMO gnuplot excels with its simple way of drawing plots, reduced to the essential parts. Especially the facilities of plotting data in combination with the fitting abilities makes it a considerable alternative to commercial products. gnuplot is able to produce various output formats, partly in very fine quality. In my experoience the most popular ones to be used in journals are jpeg, gif/png and foremost postscript. The resolutions given by the varoius terminals are good enough to be reproduced in journals.
