Well, because the PNG terminal driver the gnuplot you're using doesn't 
support pm3d plotting.  And since you didn't bother telling us which 
gnuplot (and in particular, which PNG driver) that was, that's about all 
anybody can tell you about it.  Show us the result of command 'show 
version long' in your gnuplot, and a better answer might become possible.
