[Gnuplot-info] Plotting Data from different columns

I have a data file that has multiple columns of data, i.e. x   
avg_value  max_value  min_value.  I want to plot just the max_value  
versus x, instead of avg_value vs x which is what happens when the  
plot <'file'> command is entered.  What command should I use to do this.
