That's why there's a special touch-up script for pm3d postscript output
distributed in the source tarball. See gnuplot/pm3d/contrib.

Incorrect conclusion. That's not gnuplot's doing, but a consequence of
what libraries you (or whoever did that) made available at the time of
building it.
