Not really.  gnuplot is designed to be a real-time plotting engine.

You could, in principle, achieve this in multiplot mode, with all
dynamic properties fixed in advance.

So the data set (as seen by gnuplot) shouldn't be allowed to keep on 
growing. You can scrap old data every now and then, instead, or re-send 
exactly those data you do want to display with each refresh.
