[Gnuplot-info] making 3-D plots

Using Ver. 4.0 with Win XP -

I am new to Gnu and wish to convert 3 channels of analog data to a form that Gnu recognizes.  How do I do this? - use an A/D converter and then what? -  Win Excel?
Any help would be appreciated.
