Out-of-range z values are assigned the limiting colors in the palette,
so I would try

 set cbrange [0:1]
 plot "rmsdist4gnu_scale_1_30000.dat" using 1:2:($3 < val ? -1 : 2) with image


(but I haven't actually tested that, so maybe I'm missing something)
