[Gnuplot-info] Plotting the differences between values

Gnuplot 4.6.5 on MacOS Mavericks (at last!)

How do I plot differences between successive values?  I am monitoring my 
water and gas consumption; naturally the utility meter shows cumulative 
consumption but I want to see my weekly consumption to see whether my 
"green" measures are having any effect (my electricity meter is padlocked 
so I cannot see it).

I'd like to record the actual meter readings, and get Gnuplot to work out 
the differences itself (that's what computers are for, after all).
