Hi Arnaud,
at some point in time octave developers decided to implement a kind of meta-
language, a graphics interpreter that prepares the data for the actual 
graphical interface (gnuplot in most cases).

Therefore you are in the situation to have an interpreter that implements a 
(more or less) complete instruction set for the second interpreter which is 
gnuplot (AFAIK).

Unfortunately (AFAIK) there is no direct interface to gnuplot from within 
octave any more. The commands are not transparent, instead, you have to rely 
on what has been implemented by the octave developers (not saying they did a 
bad job, but they created a graphical language "above" all other graphical 
command sets of graphics interpreters that might be used by octave).

If you want to tweak your graphs to look like you really want them to look 
like it is best to write the data to be printed into a file (say, file "A") 
and write another file that is parsed by gnuplot itself (say, file "B") and to 
use the gnuplot command set directly within file "B" to print the data in file 
"A". It'll be hard to find someone to help you with analyzing what commands 
are actually sent to gnuplot from within octave and how they could be adapted 
from within octave to match your needs.

if you really want to see the pictures above - use some font
with constant spacing like courier! :-)
