Thanks for your input, the most relevant line could be

plot 'demo.edf' binary array=64x32 dx=5 dy=10 scan=yx skip=1024
format="%*float%float" using 1 with image

But this command seems weird to me.

I never met with scan= keyword in plot, it could be that these
keywords are accompanying binary. I don't know whether these options
carry over to text file as well.
