The problem there is not with the plot; it's with the expectation.

You should not expect that kind of line-drawing to _fill_ any area with
colour.  You will get Moiré patterns that way, and those _will_
sometimes have holes.

About the best way of getting rid of that effect is to reduce the
isosamples setting enough for individual lines to become visible again.

If you wanted filled areas, I trust you know where to find the pm3d
plotting style.
