you could define a color palette with discrete colors:

set cbrange [0:6]
set palette defined (0 "white", 1 "white", 1 "green", 2 "green", 2 "yellow",
3 "yellow", 3 "orange", 4 "orange", 4 "orange-red", 5 "orange-red", 5 "red", 
6 "red")
# have a look at the palette
test palette
pause -1
# do a test plot
splot 3.*(x+y) with pm3d
