 Hi Michael, if you could convert the time format in seconds you could try

set format x "%H:%M:%S"
plot "date.txt" using 2:1:($3-$2):(0) with vectors nohead

I know is not exactly what you asked, but this is my best suggestion

unfortunately gnuplot can't handle operations between dates as far I know.
