'set pm3d' also sets 'implicit' on, so each plot is plotted with the standard surface (i.e. 'with points') plus the pm3d-surface. to avoid this either 'set pm3d explicit' and use 'splot ... with pm3d' or 'set style data pm3d' and use 'splot ...'
