Hi Jon,
put the script attached into /usr/local/bin and make it executable (chown 
root.root gnuplotps2pdf, chmod 0755 gnuplotps2pdf)

Rename your *.eps - file into an *.ps file (just rename, nothing else ....), 
I. e. mv myfile.eps myfile.ps and call

gnuplotps2pdf myfile.ps

Look what comes out via xpdf myfile.pdf

If you like it, well, this is the optimum for latex input. My suggestion would 
be to switch from the eps-terminal to the postscript terminal.

The resulting pdf files have the minimum bounding box, so a centered 
integration into latex is possible.

Take a look into the document I attached, this ought to be self explanatory in 
many directions.

if you really want to see the pictures above - use some font
with constant spacing like courier! :-)
