Hi Jon,
I am quite sure that this has nothing to do with gnuplot, but with your latex 
document. You need to include the appropriate package(s) in order to make this 
work. And you have to distinguish whether you want to generate dvi output or 
pdf output, so the next question would be whether you call "latex" or 
"pdflatex" in order to generate your document.

The log file ought to tell you more about this. To make things sure, you 
should create the very same "test.tex" file - snippet and include an eps file 
from gnuplot and then an eps file from xgrace. This should give you the same 
results. Search for the documentation of graphicx.sty, for pdflatex I'd expect 
something like 
\usepackage[pdftex]{graphicx}
within your document.

But: questions about TeX should be asked in a TeX mailing-list. This is off-
topic here.

if you really want to see the pictures above - use some font
with constant spacing like courier! :-)
