if you add a line with zeros after each data line

1 2 3 4 5 6
0 0 0 0 0 0

7 8 9 10 11 12
0 0 0 0 0 0

13 14 15 16 17 18
0 0 0 0 0 0

then you could produce a fence plot:

set surface
set hidden3d
splot for [i=0:2] 'datafilename' matrix index i using 1:(i):3 with lines
notitle
