I would like to make those > patterns configurable (in another terminal), In the 4.2 postscript terminal and associated terminals (epslatex, etc) pattern definition has been moved into an external prologue file. So if you want to experiment with new patterns, you can make a local copy of the prologue and edit it as you please. You do not have to edit or rebuild gnuplot itself. The same could easily be done for the svg terminal, which refers to patterns definitions via a URL.
