It's actually not possible to update Xorg in 5.1. There are a huge number of interdependencies that make this nearly impossible, and so you need a whole updated software stack. Hence 6.0. The fact that 6.0 isn't fully stable yet speaks towards how much things change in Linux land in just a few years. Just to give you an idea - it's actually not just an updated Xorg you need in going from 7.6 to 7.7. You actually need the updated Mesa that goes along with it (or your Xorg update won't have what you need). Mesa needs updated LLVM compiler, but you can't update LLVM without breaking internationation and you can't update internationalization without recompiling just about everything else. Now if you're on TS 6.0, someone might be able to upgrade just xorg-server as you suggested, but there are still some bigger picture issues that are affecting other people as well (particularly the missing radeonsi support). I've been talking to Don about this, and there's work being done, but there are some complications.
