I've changed the camera so that it turns to the side of the kart based on only the steering angle and the skidding amount: not based on the speed anymore. I think it works more like you suggested, although at one point while working on this I had the camera swinging too far sideways and it made me dizzy (I of course changed it after that). :) So, I really hope that this doesn't happen to anyone.
