IMHO - I would skip the effort of porting an IP-Stack to 8051 uC-Architecture if it is only about a small volume product and would use a Hardware TCP/IP-Stack like W5500 from wiznet - and keep the sw simple. According the STM8 - i am using the device in one of my projects and like it very much 3,6 MBaud SPI and 921kBaud RS-232 are done with no problems whatsoever (using SDCC) - I cant say much about I2C as I didn´t use it till now.
