Ffmpeg makes a video out of the jpegs. Read the documentation on it. I have a perl script set up to delete my jpg files every morning. And yes, you can monitor on the web, you need cambozola to do this. Look at the documentation as well.

I've got motion-3.2.11 capturing jpeg files and I can view them via
the mini http server from a different system on the same local
network.  It's very cool.

Are videos a better choice than jpeg files?  It would be a lot easier
to manage a smaller number of files.  I would like to do live
monitoring over the internet.  Would videos work well for that?  Can
anyone offer settings advice for this?

I'd like to be able to save footage on the system motion is running
on, and on another system on the same local network.  That way, if an
intruder steals the computer motion is running on, I'll have the video
backed up on another system in a different building.

Can motion do these things?
