I would like to be able to "export" (sic) my database as a .bib file but at the same time be able to choose a few fields from being included in the new bib file...
use case 1:
My friend asks me to send her my 1000-long .bib file. I don't want her to see my review and abstract, I'm shy. I spend the next few hours deleting them (I don't know scripting)
use case 2:
My friend asks me to send her my 1000-long bib file. I tell JabRef to:
File > Export > Bibtex file
A dialogue pops up and asks me which fields I would like to include in my new .bib file. I choose them. I send the new file I created in a few minutes to my friend.

You can do this by save a new version of your database, which you want to export and then use the "Set/Clear Fields" option from the "Tools"-menu.
