So. I need my laptop on blue IP 192.168.3.10 to connect to server green IP 192.168.0.10. This server will vpn to 41.xxx.xxx.157.

When I rdp from my laptop to 41.xxx.xxx.157, I need IPcop to request the route from server 192.168.0.10 and not the RED interface.

Not a total answer - but you don't need to do NAT with the WiFi router
and that would be one less hop.  Plug the wire from IPCop Blue into
one of the LAN ports on the WiFi instead of the WAN port on the WiFi,
and turn off DHCP in the WiFi. Make sure DHCP is on in the IPCop Blue
pages.  That would put your Laptop on 192.168.2.x instead of 3.x

Umm - IPCop is already Linux and it can do VPN - maybe you could set
it up to link directly from IPCop to the terminal server out on the
web?  (I've never set that up so you'll have to look at IPCop's VPN
pages.)  That would totally leave the Cisco box out of the equation.
(Laptop >>ipcop>>vpn>>web server)
