By interpolation points do you mean vector operations such as spline
fitting, or interpolating values from rasters at given points (or
something else entirely) ?

For the vector case, there is a spline smoothing method in the JTS
utility class which accepts a Geometry object as input. There are some
examples in this section of the user guide (scroll down a little)
including one where a spline curve is fitted to a set of points:
