Ah, I think the difference might be that you used the installer and I just downloaded and unzipped the Mac package?
There's exactly one place in the file where the characters "1.11+" appear. Change that to "11+".
Ooh, nice! Thank you for all the work you're putting into fixing this, and into the game in general! Fwiw, editing the plist manually is fairly easy even for those who aren't power users, so if you wanted you could provide instructions for that in the meantime. Otherwise, FreeCol will seem broken to Mac users. I'd hate for folks to be turned off this fantastic game!
Just downloaded this morning's latest, and it's still showing "1.11" in the plist -- except now it's just "1.11" instead of "1.11+". Still have to edit it to get a successful launch.
OK, I finally figured out where the log file is. I ended up making another map that for whatever reason isn't having this trouble launching, though, so the logs for the period when this was happening have cycled out. And for whatever reason it's not happening today when I try again with the old map! So I guess you can close this.

When creating multi-stop trade route, UI glitch interferes with loading one resource at multiple stops
It's an entirely custom map I created to make the game a little more tractable for a 6-y/o. Here's a copy in case it helps. One thing we did notice today is that there are a few squares on the map that remain displayed as undiscovered even with a scout on a neighboring square, and which the scout can't enter even though they're land. (And then one of them seemingly randomly became visible / enter-able on a subsequent term, but the others never did.)
