At the University of Urbino we solved the problem generated by the latest Apple update with macOS 11, Big Sur and Safe Exam Browser. We have created a button inside moodle that launches SEB, but when you press to launch SEB, only a black screen appears and nothing can be done. To avoid the black screen with macOS Big Sur 11.x it is necessary that the button inside moodle is pressed from within SEB itself, and not from any browser.
