Sorted it out!! That was the reason, it comes checked by default (deactivate Windows EFI SP), but it has to be set unchecked (activate Windows EFI SP), otherwise, the macOS EFI doesn't know where the widows bootloader is. Once unchecked, restarted, holded the 'Alt' key pressed, and there it was my Windows partition created among the bootable partitions.. Thank you very much!

You don't have to reinstall Windows, you can just restore the bootloader by disabling "Deactivate Windows ESP".
Hi. If your computer was manufactured after 2012 and you don't use the OpeCore bootloader, disable the "Deactivate Windows ESP" feature. You don't need it, and this could be the cause you're describing, as bootx64.efi is missing from the bootloader. Otherwise, judging by the log, everything is fine.

You likely tried installing Windows using other methods before, which resulted in the EFI partition being deleted and a "Microsoft Reserved" partition being created in its place (as you can see in the screenshot). This prevents you from installing the Windows bootloader. This is also bad for macOS, as the EFI partition stores firmware updates. You need to restore the EFI partition. Hey I got referred by MacSoundsSolutions, whenever I try to get windows 10 on my mac it looks all good until I reach the "create a pin" page then I always get a blue screen erro page.. I have tried bootcamp, windows installer with the UEFI no luck. It's either the drivers don't get recongnised or that blue screen. MacSounds did mention a legacy install? I was able to install Windows 11 on the bootable USB Drive. However, for me to boot there, I have to go to the Mac OS-X and use Target Disk. The USb install of Windows won't appear in the BOOT menu. The only one that shows is the OS-X and Win install on the internal drive. Any suggestions?

Using a 2018 Mac Mini. When I go to run the EFI icon upon booting, it appears to start installing (black background with white letters), then restarts and boots into my Windows which is on the internal drive. It never completes the setup on the USB drive.
