Sorted it out!! That was the reason, it comes checked by default (deactivate Windows EFI SP), but it has to be set unchecked (activate Windows EFI SP), otherwise, the macOS EFI doesn't know where the widows bootloader is. Once unchecked, restarted, holded the 'Alt' key pressed, and there it was my Windows partition created among the bootable partitions.. Thank you very much!

I'm affraid I don't know how to proceed to disable the feature you highlight (Deactivate Windows ESP). Could you provide to me with a reference that shows how to do it? Thanks in advance.

I followed the procedure described to install Windows, but, when I reboot the system and press the 'Alt' key to make the bootpicker be displayed, no Windows partition appears among the available boot options, there is only the Machintosh HD partition. Did I make any step wrong? It's a Mac mini running a macOS Sequoia 15.7.1. I've only got one SSD internal drive. I attach the log file related to the installation process.
