One of the session options is to name the tapXX or tunXX device used
for the tunnel.  This is documented in the vtund.conf manual page, and
I have paste the relevant section below:

    device dev
           network device to use.  You can  choose  tapXX  for
           ether  tunnel  or tunXX for tun tunnel.  By default
           vtund(8)  will   automatically   select   available
           device.

I did -- until I read the man page.  I have three tap tunnels that I
use to tunnel appletalk, that are started in any order.  For netatalk's
atalkd to keep AppleTalk network numbers straight, it was important to
assign network numbers to specific interfaces, and using the device
session option resolved the problem.
