Everytime I try to dismount a file container, this error appears "Some volumes contain files or folders being used by applications or system. Force dismount?".
This error is returned by the operating system and it indicates that at least a process has opened handles on files on your volume. It can be your antivirus, your word processor and other programs. It all depends on what programs are you using to access the data on your drive.
This is not an issue in VeraCrypt. You can tools like Handle or Process Explorer to see which process is using your files.
After that, it is up to you to decide if you can force the dismount or not.

I know that this is very old, but I recently had this problem on a Windows computer. I solved it by going to Settings > Mount volumes as removable media.
When you don't do this, Windows (via File Explorer) grabs hold of the mount and won't let go. Marking it as a removable medium fixes this.
