New to VeraCrypt. Encrypted an entire system. Left PIM blank. Upon reboot, it's now asking for the PIM. Any idea why? And how do I get passed the PIM password?

Just leave the PIM empty and press ENTER: it will use only the password in this case.
The bootloader can't know if you are using an empty PIM or a custom PIM value. That's why it is always request but it can be left empty and proceed with ENTER if a PIM is not used.
