How I have to set up an VeraCrypt-Container to have the fastest speed for mounting and dismounting?
I do not need the best encryption performance - I need the fastest speed.

The opening speed depends on a number of factors.
1 the operating system and mostly the computer if it is old maybe 1 cpu as opposed to newer 4 cpu's up
2 the drive magnetic or SSD
3 the PIM number you choose the higher the slower

Can I suggest you make a small volume say 100mb leave everything as default give it your password -> then open it and see how long it takes.

As for closing it is virtualy instant, unless you have a file open inside the volume.
