I am using windows 10 on an external SSD connected via USB 3.0 which has the entire system drive encrypted. My question is, if I unplugged the SSD from the USB suddenly - is my drive still as encrypted as if I had shut down the computer?
I know there are issues around unplugging a drive and not dismounting first, so wondered what the situation would be in my scenario?

The correct thing would be to first dismount the unit and then disconnect the device, but if you have an encrypted device and disconnect it without dismount it, effectively if, your device is still encrypted even if you do not dismount it correctly, this can cause your device to be damaged.
