Currently, I have to open several containers during my startup process. I would like to find a way to open them all in seperate instances or installs of Veracrypt.
I was also like to have seperate segmants for favorite vaults & seperate pools of keyfiles for these segments.
Is there a way to do this?
Perhaps a portable version?
Any other potentials?

Look at the top header option favories. You mount the ones you want mounted and then drop down the favorites option and select "add mounted volumne to favorites"
I think this is how you do this. I used to do it in Truecrypt and this should be the same. You can even edit them after you make them a favorite by using the "organize favorite volumnes". You can change the names and I think the order they are mounted. They physical drives and cable connections do have to be in the same place every time or it will not mount them.
I don't know if you can run more than one veracrypt at a time you'll have to try it and see. Also "mount system favorites" will autoamtically mount all the drives if you have the system encrypted and the volumnes are the same password (I think) I haven't tried it.
Personally I just use "auto mount devices" and it wall scan and mount them all in whatever order they are hardwired into your computer.
