DVD 4.7Gb file-container preparation steps ?

Idea:

1. create container filesystem
2. write files
3. burn file-container to dvd

Have questions:

1. At creating file-container, how to allocate right size that will fit nice on the DVD 4.7GB ?
   [ container file will have bigger size than file-system inside]

2. exFat or NTFS ? [ exFat is less redundant with data, but for this case is it better ?]

3. Re-Use, Re-Format or Re-Create file-container for better security and redundancy of deleted files ?
