On RH7.2 we're looking at a quirk in how ifup brings up the network device. For the moment, I believe you can run ifconfig eth0 192.168.1.75 netmask 255.255.255.0 broadcast 192.168.1.255 up route add default gw {ip.of.the.host} inside UML to manually assign an ip address.
