We would really like the ability to stop users when using say Word & Excel from browsing their file structure for materials they already have on their device.
I.e. a Student may have notes made in a Word Document and if they run SEB and open Word as an allowed app and then they navigate to open said Word Document.
Is this something that can be done?

Not with SEB, we have no control over the functionality (e.g. file browser dialogs) of third-party applications. If you have control over your student's devices, you could use group policies or alike to stop them from browsing the local file structure.
