(I don't know enough of the reasons for this occurrence, so I won't try to explain). One is called "gfortran" and that is part of the official GNU compiler suite. The other is called "g95" and that seems to be available in fink. I have heard good reports about both, so if you could try to build PLplot with g95, that could be yet another successful platform!
