I've looked all over, in the database, in the php files.. and I can't find where it's possible to edit the text in the notification emails. Is it possible to edit these, and where would I go to find them.

The format of the notification emails is hard-coded. If you need to edit them, then you'll have to manually change the code calling OPT_notify().
