1) yes, just do it. The space is collapsed on the presentation screen, because there are no chords displayed, but the gap remains on the print out. If you want to have some gap on the presentation screen, either use an empty line, or set up tab positions and use tab characters (use Ctrl+Tab to enter a tab character in the song editor; set up tab positions in the style editor).
2) Use any section heading you like. [Intro] works just fine. I usually use a line with only a vertical bar | as the section's lyrics if I want a blank page to be shown on the presentation screen (e.g. for an instrumental interlude).
3) You could use the "thin vertical line" unicode character u+2502, rather than the pipe character (vertical bar) on your keyboard. In Windows, enter 2502 followed immediately be Alt+x to get the vertical line character, or use the Character Map tool provided with Windows. Your font needs to support unicode's line drawing section of caracters.
